Preparation:

Preheat the oven to 150 ° C. Roll the unpeeled pecans between 2 sheets of baking paper to coarse grit with a rolling pin. Grind the hazelnuts into coarse grit in a jar mixer or food processor.

Heat the cocoa butter, Panella cane sugar and 50gr water together to about 70 ° C.

Mix everything together briefly in a large bowl. (rub together with both hands)

Distribute evenly on a baking tray with baking paper and bake at 150 ° C for +/- 1 hour.

Stir the granola regularly with a wooden spoon on the plate so that it can color evenly.

Note: very light colors. If the granola starts to brown too quickly, the oven temperature should drop to 130 ° C.

After 1 hour, turn off the oven and allow to dry for another 3 to 4 hours with the oven door closed.

Let the dried granola cool well and store in a closed cookie jar.

Serve with low-fat yogurt, semi-skimmed milk, cottage cheese, low-fat cheese, …
